Crab Omelette Recipe
- 2 tablespoons olive oil
- 1 small potato, peeled and diced
- 1 chopped onion
- 2 cloves of garic, minced
- 1/4 pound fresh crabmeat, drained and flaked
- 1 small tomato, diced
- 1 red bell pepper, chopped
- 3 eggs, beaten
- salt and pepper to taste
Heat olive oil in a skillet on medium heat. Fry the potato in the oil until tender (5-7 minutes). Transfer the potatoes to a plate lined with papertowels.
Cook the onion and garlic in the remaining oil until tender (5 minutes). Add the crab to the skillet and season with salt and pepper; stir. Coverthe skillet and cook for about 2 minutes. Stir in the tomatoes and cook for another 2 minutes. Add red bell pepper to mixture; stir and cook foranother 2 minutes.
Pour the beaten eggs over the mixture. Cook until the eggs set (2-3 minutes). Carefully flip the omelet and cook for 1 more minute. Enjoy!
