What are Soft-Shell Crabs?
Soft-shell crabs are blue crabs that have recently molted and are in the process of growing a new hard outer shell. What this means is that during this period of time, their entire body is completely edible, including the shell! The result is an incredibly tasty delicacy that can be sautéed or broiled, but is truly in its element when fried! These crabs are a southern delicacy, predominantly eaten in the coastal region from Maryland down to Louisiana. While finding recently molted crabs in the wild may be relatively difficult, fishermen have actually started harvesting the crabs before they lose their shells, keeping them in temperature-controlled tanks until they molt and can be sold and eaten!
When’s Soft-Shell Crab Season in the Outer Banks?
Soft-shell crab season is typically between March and September but the peak times for finding soft-shell crabs on the Outer Banks fall between late April and July. Moon phases and tides can generally have an effect on crab availability and it's important to go ahead and get your crabs as soon as they start showing up on local menus! The process of harvesting crabs, taking care of them, and selling them at the peak softness offers a small window for getting this delicious bite, so it's important not to hesitate when you're craving a fried soft-shell! - Billy's Seafood (Colington): Locally owned and operated, you can expect fresh, off-the-boat seafood throughout the year and local crabs daily.
- Carawan Seafood (Kitty Hawk): Easy to locate, this staple fish market includes common and rare seafood delicacies.
- Tarheel Produce (Grandy): You've probably passed this produce stand, which has been supplying the area with local seafood since 1900.
Keep an eye out and see if the crabs are "dressed" before buying. If not, you'll need to prep and clean the crabs yourself, as many markets sell them live. It's not difficult, but you may want to watch a video or two your first time.

How to Cook Softshell Crabs
Cooking soft shell crabs is easier than you think! Here’s a basic method to try the next time you have some fresh soft-shell crabs on hand!
Classic Pan-Fried Soft Shell Crabs:
Ingredients:

4 soft shell crabs (cleaned)

1/2 cup flour

Salt & pepper

Butter and/or oil

Lemon wedges
Instructions:

Pat crabs dry with paper towels.

Dredge lightly in seasoned flour.

Heat butter/oil in a skillet over medium heat.
